For breakfast, we often make pancakes; we usually love the classic ones that we enrich with maple syrup, various jams, fresh fruit, cream, chocolate. Everyone according to their own tastes. This time I wanted to change it up by adding grated apple. I must admit that the flavor of this fruit is very delicate and barely noticeable, but my daughter enjoyed these Apple Pancakes so much that she ate them just like that, without any additions.

Ingredients
- 1 1/4 cups Milk
- 3 Eggs
- 1 1/2 cups All-purpose flour
- 3 tbsps Butter
- 1 tbsp Sugar
- 1 pinch Salt
- 1 tsp Baking powder
- 1 cup apples (peeled (1 apple))
- as needed Butter (spray)
Preparation
In a bowl, place the eggs with the milk and beat with a whisk until combined.
Add the melted butter, the flour a little at a time, the baking powder, sugar, and finally the pinch of salt.
Beat with the whisk until the mixture is smooth and not too thick, without lumps.
Wash the apple, peel it, core it, and grate it (I use a lemon zest grater).
Incorporate it into the flour and egg mixture.
Stir with the whisk or a spatula until the grated apple is evenly distributed throughout the mixture.
I usually use one and a half ladles per pancake; with these amounts, I get about 10.
Turn on the gas over medium heat, spray the pan with butter spray (mine is 7 inches in diameter), pour in one and a half ladles of the mixture.
As soon as it starts to bubble on the surface, it’s time to flip the pancake, cook for about a minute on the other side.
The pancakes should have a nice golden color.
Serve hot with your preferred toppings.
Tips/advice
With these doses and the 7-inch diameter pan, you won’t get very thick pancakes; obviously, it depends on your taste.
