Dorayaki (Japanese Pancakes)

After introducing you to the Anko recipe, I couldn’t resist trying to make Dorayaki (Japanese pancakes), made famous by the robot cat Doraemon, the protagonist of the Japanese cartoon, which are filled precisely with this red Azuki bean jam. The name of these sweets comes from the word ‘dora’ meaning ‘gong’ as they resemble its shape and color. But now let’s see the procedure!

Ingredients

  • 1/3 cup Water
  • 1 1/4 cups All-purpose flour
  • 2/3 cup Powdered sugar
  • 2 Eggs
  • 2 teaspoons Honey
  • 1 packet Vanillin (0.4g)
  • 2 teaspoons Baking powder
  • as needed Spray butter (for greasing pans)

Preparation

  • Place the eggs, sugar, and vanillin into a bowl and beat well with a whisk.

    Add the honey, flour, and baking powder, and mix again with the whisk until the ingredients are combined.

    Finally, add the water and mix until you obtain a smooth batter without lumps.

    Let it rest in the fridge for about 15/20 minutes.

    Grease a small pan with spray butter, heat it, and put in a ladleful of batter.

    Cook for a few minutes on each side.


  • Serve the Dorayaki filled with Anko (red Azuki bean jam)

Tips/Advice

The Dorayaki with this amount of sugar have a medium sweetness.
