When I was young, I didn’t even know what Halloween was, as it hadn’t yet spread in Italy. Well, with this statement, I’ve completely revealed myself, and you’ve surely realized I’m not eighteen! 🙂 In recent years, it has been gaining ground, and even though I still don’t feel it’s mine, I always prepare some themed sweets or dishes for the kids and their friends, and they are always thrilled! And thus these Colorful Cookies with Eyes (Halloween) were born. I’ve seen many online; this is my version.

Ingredients
- 3/8 cup Sugar
- 3 1/2 tbsp Butter (at room temperature)
- 1 1/4 cup All-purpose flour
- 1 Egg (at room temperature)
- tsp Baking powder (half a teaspoon)
- tsp Baking soda (half a teaspoon)
- 1 pinch Salt
- 1 packet Vanilla sugar
- as needed Food coloring
- as needed Sugar eyes
Preparation
Put the softened butter cut into pieces and the sugar in a mixer with whisks.
Blend until well mixed, then add the egg and beat until fluffy.
In a bowl, put the flour, baking soda, baking powder, vanilla sugar, and in a corner the salt.
Gradually add this dry mixture to the mixer and mix until all the ingredients are well combined.
Now remove the dough from the mixer bowl, place it on a floured board, divide it into three parts, and place it in three different bowls.
Now incorporate the food coloring: powdered ones are preferred, if you use liquid ones add a little flour too, otherwise the mixture will be too soft. The consistency should be like modeling clay: soft and moldable, slightly sticky.
Using a melon baller, make balls weighing about 1/2 oz (I made 25 in total), lightly flour a plate, place the balls on top and put in the freezer for about 10 minutes.
Place the balls on a baking sheet lined with parchment paper, spaced apart, and gently press the surface, flattening them lightly.
Bake at 350°F for 10 minutes.
As soon as you take them out of the oven, add the eyes by gently pressing them into the surface to embed them into the cookie.
Tips/Suggestions
For these cookies, I used both liquid and powdered food colors, as well as gel ones.
I obtained the green by adding a teaspoon of blue liquid food coloring.
The red, instead, comes from combining a teaspoon of red powdered food coloring and a bit of red gel food coloring, which makes the color more vibrant.
The maroon ones, I got by adding a teaspoon of blue liquid food coloring, a teaspoon of red powdered coloring, and a teaspoon of yellow liquid coloring.
Remember to add the flour along with the liquid food coloring and knead until fully absorbed. The consistency should be like modeling clay: elastic, moldable, slightly sticky.
