Cinnamon Shortcrust Pastry Baskets with Figs and Concord Grapes

I really enjoy preparing desserts for Saturday and Sunday breakfast, since only on weekends do we have more time to sit and eat together without having to constantly check the clock! So I wanted to try making these Cinnamon Shortcrust Pastry Baskets with Figs and Concord Grapes, which to my surprise, even my daughter, who is really hard to please, liked!

Ingredients

  • 2 cups All-purpose flour
  • 7 oz Butter
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 teaspoon Ground cinnamon (level teaspoon)
  • 12 teaspoons Fig jam
  • 10 Figs
  • 1 bunch Concord grapes
  • as needed spray butter (for the cups)
  • as needed All-purpose flour (to dust the cups)

Preparation

  • Place the flour on a pastry board, make a well in the center, add the eggs, sugar, softened butter, and cinnamon, and start kneading, without overworking the ingredients, until the dough is smooth and no longer sticky.

    Form a ball, wrap it in plastic wrap, and put it in the fridge for about half an hour.

  • Roll out the shortcrust pastry with a rolling pin, it should be slightly thick.

    Line the previously buttered and floured cups with a diameter of 4.13 inches.

    Level the edge so that it’s all the same height, add two teaspoons of jam inside the basket, the figs cut into 4 parts, and the Concord grapes.

  • Bake in the oven at 356°F for 25/30 minutes

Tips

I love cinnamon, I believe a level teaspoon gives the shortcrust pastry the right taste. If you like it more pronounced, you can add a bit more.

For these baskets, I used fig jam, but cherry jam is also quite good.
