I experimented with cinnamon shortcrust pastry and I must admit that I love it! As soon as you start kneading it, the aroma fills the kitchen, and when you bake it, the whole house smells of cinnamon. I wanted to try this simple but tasty recipe: Cinnamon Shortcrust Clusters with Concord Grapes, a delicacy, easy and super tasty!
- Difficulty: Easy
- Cost: Economical
- Rest time: 30 Minutes
- Preparation time: 45 Minutes
- Portions: about 20 clusters
- Cooking methods: Oven
- Cuisine: Italian
Ingredients
- 2 cups all-purpose flour
- 7 oz Butter
- 1/2 cup Sugar
- 2 Eggs
- 1 tsp Ground cinnamon (a level teaspoon)
- 1 bunch Concord grapes
- as needed Blue food coloring
Preparation
Place the flour in a mound on a pastry board, make a well in the center, add the eggs, sugar, softened butter, cinnamon, and start kneading without overworking the ingredients, until the dough is smooth and no longer sticky.
Form a ball, wrap it in plastic wrap, and place it in the fridge for about half an hour.

Set aside a small ball of shortcrust pastry to which you will add the blue food coloring, turning it a nice green.
Roll out the remaining shortcrust pastry with a rolling pin, it should not be too thick, and cut it into strips about 3/5 inch wide (this depends a lot on the size of the grapes).
Remove the grapes from the bunch, slightly moisten them (so they adhere better to the pastry), and roll them one at a time in the strips, sealing them by slightly wetting the edge.
Join together 6 of these grapes to form a cluster, slightly moistening the edges to make them stick better. With the green dough, make small leaves.
Bake the clusters in the oven at 356°F for 20 minutes and the leaves for 10 minutes.
Tips
I love cinnamon, I believe that a level teaspoon gives the shortcrust the right taste. If you like it stronger, you can add a bit more.
Indicatively, I mentioned that you can obtain about 20 clusters; this depends a lot on the size of the grapes, precision is not possible in this case.
