  • 5.3 oz Emmentaler
  • 5.3 oz Cooked Ham
  • to taste Fine salt
  • 2.2 cups Breadcrumbs
  • 2 tbsps Parmigiano Reggiano DOP (grated)

Preparation

  • Wash and clean the zucchini.

Slice them with a peeler into thin slices about 1/16 inch thick. In a plate, place the breadcrumbs, grated Parmesan, and a pinch of salt.

Coat the zucchini slices in this mixture, trying to cover them completely.

Place the slices on a surface, add a strip of ham, a strip of Emmentaler, and roll everything up, securing the roll with a toothpick.

  • In an aluminum tray for 8 portions, size about 12×9 inches, lined with parchment paper, place the rolls, drizzle them with a little olive oil, and bake at 356°F for 20 minutes, then switch the oven to grill mode for about 10 minutes.
