Tonight I wanted to prepare fish, but I was looking for a quick and simple recipe! That’s why I chose Saury in Crazy Water, also called Scad or Suri. It’s a bluefish, rich in calcium, phosphorus, potassium, and omega 3, with a truly exquisite flavor. It also has a great price, the only drawback is the bones, but they can be removed quite easily.

Ingredients
- 4 saury about 7 oz each
- 1 Onion
- 1 clove Garlic
- 2 Tomatoes about 12 oz
- 1 cup Water
- 1 pinch Chili pepper
- to taste Chopped parsley
- 2 pinches Fine salt
- 2 teaspoons Pickled capers
Preparation
I bought the saury already gutted and scaled.
In a 12-inch diameter pan, I put a bit of oil, the finely chopped onion, and garlic.
Let everything brown slightly and then add the fish. In a glass, put 1 cup of water, add the salt, chili pepper, and finely chopped parsley.
Pour everything into the pan, add the diced tomatoes, capers, and cook with the lid on for about 25 minutes.
Do not turn the saury, otherwise they will break apart.
Notes
Saury or scad or suri are also a low-calorie fish, making them quite light.
You can accompany this dish with croutons, which pair very well with the sauce that forms at the end of cooking.
