The ham and cheese omelette is a quick dish to prepare, especially in the evening when you’re always in a hurry and need to put something tasty on the table in no time! You can fill it with a variety of ingredients; in this one, I chose cooked ham and Emmental, but any other deli meat or cheese you like is fine, as long as it’s not too watery.

Ingredients
- 2 Eggs
- 1 tablespoon Parmigiano Reggiano DOP (grated)
- to taste Table salt
- 1 slice Cooked ham
- 1 slice Emmental
- to taste Chives
- to taste Olive oil
Preparation
Break the eggs into a deep dish, add the grated Parmesan, salt, chives, and beat well.
Take a pan with a diameter of 10 inches, grease it with a little olive oil, pour in the beaten eggs, trying to level them well, covering the entire surface of the pan.
Cook for 5 minutes, then flip it and cook the other side.
Place the slice of ham and cheese on one half of the omelette and fold in half.
Heat for two minutes on each side and serve.
Notes
If you like, you can accompany the omelette with sauces: mayonnaise, ketchup, or others according to your taste.
