The pork loin stuffed with spinach is a very easy main course to make, excellent and juicy, with rather long cooking times. A definite plus is that the preparation will take you very little time, the rest will be done by your oven! I filled it with delicate spinach, but you can also choose to use another vegetable (such as chard or asparagus).

Ingredients
- 2.2 lbs Loin (pork)
- 10.5 oz Spinach (boiled)
- to taste Rosemary
- to taste Sage
- to taste Fine salt
- to taste Olive oil
Preparation
Sauté the already boiled spinach with a little oil and salt.
Make a cut in the center of the loin and fill it with the cooled spinach.
At this point, sprinkle the entire surface with chopped rosemary and sage mixed with a little fine salt.
Place the loin in a lightly oiled baking dish and cook in the oven at 350°F for 1 hour, covering it with a sheet of aluminum foil.
Notes
Obviously, cooking times will vary depending on the size of the loin piece, they may increase or decrease.
