You know, grandma’s recipes are the best, and I still remember the scent that could be smelled from outside the gate of my grandma’s house when I went for a snack after school.

Not the usual delicious and original strudel, but a tasty summer reinterpretation to make with fresh peaches without even removing the skin of its fresh peaches, a recipe that I have also learned to make over time and that I prepare today with so much homesickness.

Ingredients Peach and Amaretti Strudel Grandma’s Recipe

  • 2 cups Manitoba flour (or all-purpose flour)
  • 2 tbsps butter
  • 1 pinch salt
  • 1 teaspoon sugar
  • 1/4 cup water (warm at 104°F)
  • 2 yellow peaches
  • 1/3 cup peach jam
  • 2 oz amaretti (crumbled)
  • 1.75 oz hazelnuts (chopped)
  • 1 tablespoon honey
  • to taste powdered sugar

Preparation Peach and Amaretti Strudel Grandma’s Recipe

  • In a large bowl, sift the flour with the sugar and salt, add the cold butter in pieces and work it with your hands until you have a rather crumbly mixture.

  • Add the warm water gradually, continuing to knead with the help of a spoon, then form a smooth and compact ball, cover it, and let it rest for 30 minutes.

  • In the meantime, wash and slice the peaches thinly (without removing the skin).

  • Roll out the dough with a rolling pin into a 1/8-inch thick rectangle, the ideal size would be 8 x 12 inches.

  • In the center of the rectangle along the length, spread the jam, crumble 2/3 of the amaretti on top, and finely chopped hazelnuts.

  • Place the peach slices on top, slightly overlapping them.

  • Fold the 2 long sides inward, making a 3/4-inch border, then cover the peaches just slightly with the dough, letting them be visible.

  • Preheat the oven to 320°F with fan, or 356°F static.

  • Drizzle the peaches with honey, distribute the remaining amaretti, and bake in the middle rack.

    Bake the Peach and Amaretti Strudel grandma’s recipe for 20 minutes, remove from oven, let cool slightly, and sprinkle with powdered sugar before serving.

Storage, advice, and variations Peach and Amaretti Strudel Grandma’s Recipe

You can store the peach strudel under a glass dome for 3 days, or in the refrigerator in an airtight container for 4 days.

Use whatever peaches you have at home, even if they aren’t yellow.

If you want, you can skip the hazelnuts or replace them with walnuts or almonds.
