The Braised Ossobuco with Porcini Mushrooms is really excellent. To preserve its flavor, I cooked it simply, but I assure you that the taste is superb! However, note that the cooking time is quite long, so you need to start preparing well in advance!

Ingredients

  • 4 veal shanks (approx. 9 oz each)
  • 14 oz porcini mushrooms
  • 2 onions (medium)
  • 1 pinch coarse salt
  • to taste olive oil
  • to taste chopped parsley

Preparation

  • In a large non-stick pan, add a little oil and brown the veal shanks on both sides.

    At this point, add a glass of water, the chopped onion, and cook over low heat with the lid on for about an hour and a half, without turning them.

    If you notice that the water dries up during cooking, add a little more.

    Once the time is up, the meat should already be tender. Add the porcini mushrooms cut into cubes or slices, season with salt, and continue to cook over low heat with the lid on for about half an hour.

    If the meat is too soupy, let it dry for a few minutes by raising the heat and removing the lid.

    Sprinkle with chopped parsley.
