The Braised Ossobuco with Porcini Mushrooms is a truly excellent main course. To preserve its flavor, I cooked them simply, but I guarantee that the taste is superb! However, be aware that the cooking time is quite long, so you need to start preparing well in advance!

Ingredients
- 4 veal shanks (about 9 oz each)
- 14 oz porcini mushrooms
- 2 onions (medium)
- 1 pinch coarse salt
- as needed olive oil
- as needed chopped parsley
Preparation
In a large non-stick pan, add a little olive oil and brown the ossobuco on both sides.
At this point, add a glass of water, the chopped onion, and cook over low heat with the lid on for about an hour and a half, without turning them.
If you notice the water evaporating during cooking, add a little more.
After the time has passed, the meat should already be tender. Add the porcini mushrooms cut into cubes or if you prefer, into slices, season with salt, and continue cooking over low heat with the lid on for about half an hour.
If the meat is too brothy, let it dry for a few minutes by increasing the heat and removing the lid.
Sprinkle with chopped parsley.
