Muffins with canned peach puree are truly little explosions of flavor; you can decide how many to eat, being single serving, without having to give up a sweet treat after meals.
- Difficulty: Easy
- Cost: Economical
- Preparation time: 20 Minutes
- Cooking time: 15 Minutes
- Portions: 10 muffins
- Cuisine: Italian
Ingredients
- 1.06 oz Butter
- 0.71 oz Sugar
- 3.53 oz Peaches (canned and pureed)
- 1.41 oz All-purpose flour
- 1 tsp Baking powder
Preparation
In a bowl, beat the softened butter with sugar using a whisk. Add the flour, baking powder, and peaches that you have drained well and pureed (I simply mashed them with a fork). Mix the ingredients well.
Spray butter inside the baking cups and flour them. Place about two teaspoons of the mixture per cup and then add a little at a time until you finish the batter (you will get about 10 cups, each with a diameter of 2.17 inches and a height of 0.98 inches).
Bake at 356°F for about 15 minutes. Always do the toothpick test to check if they are cooked.
Tips/Advice
For these muffins, I used paper cups with a diameter of 2.17 inches and a height of 0.98 inches. With these quantities, you’ll get about 10.
