Eggless Butter Cookies

Eggless butter cookies are great for breakfast, but also delicious for a light and tasty snack.

Ingredients

  • 8.5 tbsp Butter
  • 1/2 cup Sugar
  • 1 2/3 cups All-purpose flour
  • 1 tsp Baking soda
  • to taste Brown sugar
  • 1 Orange peel (grated)

Preparation

  • In a mixer, place the softened butter with the sugar and mix well until you get a smooth mixture.
    Add the flour, grated orange peel, and baking soda, continuing to mix.
    Remove the dough from the mixer and work it with your hands to form a dough ball.
    Cover the baking tray with parchment paper.
    Prepare balls of about 0.7 oz each (you’ll get 22-23) and place them on the tray.
    Take a glass, flour the bottom, and press the balls, creating discs about 0.4 inches high.
    Let them rest for about half an hour (or more if you can).
    Bake at 350°F for about 25 minutes.

Notes

If you prefer lighter cookies, reduce the amount of sugar.
Do you like a stronger orange flavor? Then grate the peels of two oranges.
