Rice with Mozzarella and Eggs is a first course loved by children who enjoy the strings of mozzarella stretching with every forkful, but also by adults as it is a quick-to-prepare dish, yet very tasty!

Ingredients
- 1 1/4 cups Rice
- 2 125 g Mozzarella
- 3 Medium eggs
- 2 teaspoons Coarse salt
- 1 oz Grated Grana Padano
Preparation
Place plenty of water in a pot, once it boils, add salt, let it dissolve and then add the rice.
Cook for the time indicated on the package, drain with a colander, then return it to the cooking pot over low heat, add the mozzarella cut into small cubes and the eggs.
Stir until the mozzarella is completely melted and the rice takes on a uniform yellow color.
Add the grated Grana Padano, continue stirring, and serve hot.
Tips/Advice
If you prefer a stronger flavor, you can replace the Grana Padano with grated Pecorino.
