Chicken Salad

Looking for a quick dish that doesn’t require much cooking? Here’s the chicken salad: grilled and shredded chicken that you can simply dress with a few tablespoons of mayonnaise or get creative by adding the ingredients you like best! I’m sharing the recipe I usually make at home.

Ingredients

  • 1.1 lbs Chicken breast (sliced)
  • 1 cup Zucchini (grilled)
  • 10 oz Canned yellow corn kernels
  • 2 Tomatoes (about 12 oz in total)
  • 2 tbsp Mayonnaise
  • to taste Salt
  • to taste Olive oil
  • to taste Rosemary

Preparation

  • Cook the chicken slices on a grill pan, adding just a bit of rosemary and salt. It will take about a minute per side.
    Place the slices on a plate, let them cool, and then shred them by hand.
    In a bowl, combine tomato slices, corn, chopped zucchini, and shredded chicken.
    Add the mayonnaise, adjust the salt and oil, mix everything well, and serve.

Notes

To shred the chicken, cut it into rather thin strips.
If desired, you can also add olives, cheese pieces, or other ingredients of your liking.
To always have grilled zucchini on hand, I grill them in the summer and then freeze them in special bags.
