The Quiche Lorraine is a tasty pie usually made with savory shortcrust pastry or puff pastry. In this recipe, I will use ready-made puff pastry, which is certainly easier to find at the supermarket. You can prepare this savory pie with various ingredients. I chose the Quiche Lorraine with chicken, bacon, and ricotta. A soft delight full of flavor!

Ingredients
- 14 oz Chicken breast
- 5 oz Smoked bacon (diced)
- 4 Eggs (medium)
- 1 1/4 cups Milk
- 9 oz Ricotta
- 7 oz Emmental cheese
- 1 tbsp Smoked paprika
- 2 tbsps Parmigiano Reggiano DOP (grated)
- to taste Fine salt
- to taste Black pepper (ground)
- 2 tbsps Olive oil
- 1 Onion (medium)
- 1 Puff pastry (round, 8 oz.)
Preparation
In a pan, add the oil and sauté the finely chopped onion along with the diced chicken, bacon, and smoked paprika. Adjust with salt and pepper.
In a bowl, beat the eggs, add the milk, ricotta, Parmigiano, salt, pepper, and mix well with a whisk.
In a 11-inch diameter baking dish, spread the puff pastry with parchment paper underneath. Cover the base with finely diced Emmental cheese, place the chicken on top, and finally add the egg mixture.
Bake at 356°F for about 90 minutes. Always do the toothpick test; if it comes out dry, then it’s done.
Tips/Recommendations
Of course, you can also use another cheese instead of Emmental, the important thing is that it is not too watery. Therefore, you could substitute it with Gruyere, Fontina, or even Provolone.
