Ingredients
- 7 oz green apples
- 1 tbsp lemon juice
- 2 tbsp powdered sugar
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 4 eggs
- 2/3 cup milk
- 4 egg yolks (from medium eggs)
- 1 1/4 cups powdered sugar
- 1/3 cup cornstarch
- 1 orange zest
- 1 1/4 cups orange juice
- 3 tbsp butter
- to taste meringues (colored)
- to taste wafer leaves
- to taste chocolate balls
Preparation
Wash, peel, and cut the apples into wedges.
Place them in a blender with the lemon juice, 2 tbsp of powdered sugar, and finely chop.
In a bowl, beat the eggs with the sugar using a whisk, add the apples, and mix.
Gradually pour in the flour and incorporate it into the batter.
Add 1/2 cup of sugar and the baking powder, thoroughly mixing all the ingredients.
Pour the mixture onto a baking sheet lined with parchment paper.
Bake at 350°F for about 20 minutes.
Roll the hot sponge cake around the parchment paper, then wrap everything in a kitchen towel and let it cool.Separate the egg whites from the yolks and place the yolks in a bowl with 1 1/4 cups of powdered sugar.
Mix well with a whisk until the mixture becomes frothy.
Heat the milk to which you have added the grated zest of an orange.
Gradually incorporate the hot milk into the egg mixture and stir with a whisk.
Now, pour the mixture into a small saucepan and cook over low heat.
Add the cornstarch while continuously stirring with the whisk.
Incorporate the orange juice and finally the butter in pieces.
Allow the cream to cool.Unroll the cake roll, spread the orange cream, and roll it up again.
Cover the surface with orange cream and decorate as desired. I used small colored meringues, wafer leaves, and chocolate balls.
Suggestions/Tips
To check if it’s cooked, always use the toothpick test.
If you prefer a lighter cream, reduce the amount of orange juice and increase the milk.
