The Baked Potato Omelette with Smoked Paprika is a very appreciated and tasty second course. It is usually cooked in a pan with plenty of oil, but we bake it instead, which is why we affectionately call it “bakedlet”! It might be a bit less flavorful, but definitely lighter.

Ingredients
- 2.2 lbs Potatoes
- 7 Eggs (medium)
- 1 oz Parmesan cheese (grated)
- 4 pinches Smoked Paprika
- 3 tbsps Milk
- to taste Fine Salt
- to taste Black Pepper (ground)
- to taste Olive Oil
- to taste Butter (spray)
- 2 tbsps Breadcrumbs
Preparation
Wash, peel, and cut the potatoes into very small cubes. Heat a bit of olive oil in a pan and cook the potatoes for about 15 minutes. Add the smoked paprika, fine salt (about 5 pinches), and pepper (3 pinches). Spray a 12-inch diameter baking pan with butter spray, sprinkle it with breadcrumbs, and place the cooked potatoes inside, trying to level them and cover the entire bottom of the pan. Beat the eggs in a bowl, add the milk, Parmesan, and adjust with salt and pepper. Pour the mixture into the pan, ensuring you cover all the potatoes well. Bake at 356°F (180°C) for 20/25 minutes.
Tips/Advice
Obviously, you can cook the omelette in a pan with oil, but we usually bake it for a lighter version!
