The savory pie with spinach and sausage dough is truly a dish full of flavor, simple and quick to prepare.

Ingredients
- 18 oz Spinach (boiled and squeezed)
- 12 oz Sausage
- 1 cup Heavy cream (for cooking)
- 2 Eggs
- 1/3 cup Parmesan cheese (grated)
- 1 pinch Bay leaf (dried)
- 1 pinch Sage (dried)
- 1 pinch Thyme (dried)
- 1 pinch Black pepper (ground)
- 1 Puff Pastry (rectangular 8 oz.)
Preparation
Sauté the sausage dough for a few minutes in a pan, seasoning it with bay leaf, sage, thyme, and pepper.
In a blender, roughly chop the spinach, trying not to mince them too finely.
Place in a bowl the spinach, sausage dough, cream, eggs, Parmesan cheese.
Mix all the ingredients well.
Line a 2.2-liter (11.5 inches long x 7.5 inches wide) baking dish with parchment paper, place the puff pastry and put the mixture inside.
Bake at 350°F for about 40/45 minutes
Notes
To always have spinach ready, when it is in season, I prepare a lot of bags and freeze them. I simply boil them and then form not too large balls that I will put in the freezer.
