Baked Potato Omelette

The baked potato omelette is truly an excellent, hearty, and tasty second course that usually pleases the whole family. It can be prepared with various ingredients, getting creative and using leftovers found in the fridge, from pieces of cheese to cold cuts we can’t finish.

Ingredients

  • 1.3 lbs Potatoes
  • 8 Eggs
  • 2 pinches Fine salt
  • 0.88 oz Parmesan cheese (grated)
  • to taste Chives (chopped)
  • 2 pinches Black pepper (ground)
  • to taste Olive oil

Preparation

  • Wash the potatoes, peel them, and cut them into very small cubes.
    Heat a little oil in a pan, add the potato cubes, salt, and cook for about 15/20 minutes. Once cooked, let them cool on a plate.
    In a bowl, put the eggs, Parmesan, chives, a little salt, pepper, and beat well with a whisk.
    Add the cooked potatoes, mix well.
    Spray a 12-inch pan with cooking spray and pour the mixture inside.
    Bake in a fan oven for 15 minutes at 356°F

Notes

I propose this oven recipe for a lighter touch, but if you prefer, you can easily make it in a pan, it will be tastier.
For practicality and convenience, I use cooking spray, but you can grease the pan with a piece of butter.
