The Layered Stuffed Omelet is usually liked by everyone; I prepare it in a pan using little oil to avoid it sticking. I recommend using a good non-stick pan; otherwise, you risk breaking the omelet and failing to construct the dish.

Ingredients
- 6 Eggs (medium)
- 4 tbsps Parmesan cheese (grated)
- 3 pinches Fine salt
- 3 pinches Black pepper (ground)
- 3 pinches Parsley (dried)
- 6 tbsps Milk
- 1.75 oz Zucchini (grilled, about 10 slices)
- 3.5 oz Cooked ham (sliced)
- 1 Mozzarella (about 4.4 oz)
- as needed Olive oil
Preparation
Place two eggs, two tablespoons of milk, one tablespoon of grated Parmesan, a pinch of salt, one of pepper, one of parsley in a bowl, and beat well with a whisk.
Put a little oil in a 10-inch non-stick pan and spread it well over the entire bottom with a sheet of kitchen paper.
Turn on the flame not too high, and as soon as the pan heats up, add the egg mixture.
Cook for about two minutes on each side and place on a plate.
Prepare two more omelets with the same proportions.
Take a 10-inch baking pan, line it with parchment paper, and place the first omelet.
On top, make a layer of ham and one of mozzarella sliced thinly.
Place the second omelet, make a layer of ham and one of grilled zucchini.
Cover with the third omelet, sprinkle with grated Parmesan, and cook in a fan oven at 356°F for 15 minutes.
Notes
If you prefer thicker omelets, you can use 3 eggs per omelet. To flip them, you can try flipping them like chefs do, or when you see the surface setting, turn it onto a plate (holding it with a cloth to avoid burning yourself) and slide it back into the pan to continue cooking the other side. To prevent the mozzarella from releasing water, let it drain in a colander. You can also use less watery cheese, like provolone or Emmenthal.
