Ingredients
- 1 cup Beef broth
- 1/2 cup White wine (gewürztraminer or traminer)
- 3 Egg yolks
- 1/2 cup Fresh liquid cream
- 1 pinch Nutmeg
- 1 pinch Ground cinnamon
- to taste Fine salt
- 2 slices White bread
- 3 tbsps Olive oil
- to taste Chives (chopped)
Preparation
Take the slices of white bread, trim the edges, and cut them into cubes about 1/4 inch each.
In a pan with olive oil, roast the bread cubes, stirring continuously to prevent burning. Sprinkle with cinnamon and a bit of fine salt, then set aside on a small plate.
In a saucepan, pour the beef broth and heat it using a double boiler.
Whisk it with a manual whisk for a few minutes, being careful not to let it boil, so it should not exceed 194°F.
Add the wine and continue whisking.
In a separate container, whisk the cream with the yolks using a manual whisk.
Place the cream mixture in the saucepan with the broth and wine, being very careful not to let it boil, otherwise the egg will curdle, continuing to whisk it.
When the broth has a creamy consistency, add nutmeg, cinnamon, and salt.
Serve it in special cups, sprinkling the surface with chopped chives and adding the croutons.
Tips, Recommendations
I recommend heating the mixture in a double boiler since it is easier to control the temperature and lessens the risk of boiling the broth.
If the soup does not have the right creaminess, add 1 or 2 teaspoons of cornstarch at the end of cooking.
