Perch Rolls with Cooked Ham

An original main course to offer during the holidays with a taste that combines the delicate flavor of perch with the more decisive one of cooked ham, enriched with spices and citrus fruits.

Ingredients

  • 1.1 lbs Perch (fillets)
  • 1 Oranges
  • 1 Lemon juice
  • 2 tbsp Olive oil
  • 2 tsp Mustard
  • 2 pinches Parsley (dried and chopped)
  • 2 pinches Black pepper (ground)
  • 4 pinches Salt
  • 1 tbsp Ginger powder
  • 1 tbsp Pink pepper (ground)
  • 7 oz Cooked ham (slices)

Preparation

  • Place in a container the juice of 1/2 lemon, oil, salt, parsley, pepper, mustard, 50 ml of water and whisk well to emulsify.
    Put the perch fillet in a pan, the sauce made with lemon, the juice of one orange, sprinkle well with ginger and cook for about 15 minutes.
    Adjust with salt, pepper, and spices.
    In a pan, brown the slices of cooked ham until they become golden.
    Cut the perch into rectangular pieces, decide on the size you want the bite to be, and wrap it in the ham.
    Serve hot with the remaining sauce from the perch cooking.
