I love making cookies and cakes, but I also like to vary the taste and try combinations that are unusual for me. This time I decided to prepare cinnamon shortcrust pastry and I assure you it’s truly amazing. Try it for cookies, cakes, pies and let me know if you agree with me.

Ingredients
- 2 cups All-purpose flour
- 7 tbsps Butter (cold)
- 1/2 cup Sugar
- 2 Eggs (medium)
- 1 tsp Ground cinnamon (level)
Preparation
Place the flour on a surface in a mound, make a well in the center, add the eggs, sugar, cold butter from the fridge, grated coconut, and start kneading without overworking the ingredients until the dough is smooth and no longer sticky. If necessary, add a bit more flour.
Let the ball rest in the refrigerator for at least half an hour before using it.
Your base for cakes and cookies is now ready.
Tips/Advice
For preparation, use cold butter from the fridge, cut it into small cubes, and incorporate it into the dough.
I used a level teaspoon of ground cinnamon which gives the shortcrust pastry a medium flavor; if you prefer a stronger taste, increase the amount.
