The apple cake is certainly a classic dessert, to enjoy at any time of the day: from breakfast, to snack time, to a comforting evening dessert. Here is Aunt Eugenia’s Apple Cake, an excellent cook who will surely suggest new dishes that we will post as soon as possible!

Ingredients
- 3 Eggs
- 1 3/4 cups All-purpose flour
- 1/4 cup Water
- 1 packet baking powder (16g)
- 6 Apples (about 500g when peeled)
- 3/4 cup Sugar
- 1/4 cup Olive oil
- 2 tablespoons Sugar (to sprinkle on top)
Preparation
In a bowl, beat the eggs with the sugar using a whisk.
Add the water and oil, mix well again.
Now incorporate the sifted flour and baking powder, and blend the ingredients.
Wash the apples and peel them.
Dice about 300g of apples into fairly small pieces, and set aside the remaining 200g.
Now add the 300g of diced apples and mix well with a spatula.
Pour the mixture into a 10-inch (26 cm) diameter cake pan previously buttered and floured.
Slice the remaining 200g of apples into thin slices and cover the pan.
Sprinkle the surface with two tablespoons of sugar.
Bake at 350°F (180°C) for about 30/35 minutes.
I recommend always doing the toothpick test: if it comes out dry, the cake is cooked.

Tips/advice
To check if it’s baked, insert a toothpick into the cake: if it comes out dry, it’s done (touch the toothpick to your lips, you’ll immediately understand if there’s no more moisture!)
