I like the taste of anchovies; I find they add more flavor to the pasta, making it tasty with an extra touch of flavor. In these Spaghetti with Anchovies, Tomato, and Tropea Onions, I added flavorful ingredients to give the dish more body.

Ingredients
- 10.5 oz spaghetti
- 9 oz tomatoes
- 8 fillets anchovies (in oil)
- 4 teaspoons gomasio
- 1 teaspoon ginger powder
- 3 red Tropea onions (small pickled)
- 1 clove garlic
- as needed olive oil
- as needed smoked salt
- as needed black pepper (ground)
- 4.4 oz mozzarella
- 2 teaspoons sugar
- 20 capers (pickled)
Preparation
In a pan, put a little oil with a clove of garlic, add the previously blended onions, blended tomatoes, 4 teaspoons of gomasio, 1 teaspoon of smoked salt, two teaspoons of ginger, the sugar, the pepper, the anchovy fillets, the capers and cook for about 30 minutes. Finally, add the blended mozzarella and leave on the heat until it is completely melted. Adjust salt and spices if necessary.
Meanwhile, put plenty of water in a pot, as soon as it boils add two teaspoons of coarse salt and cook the spaghetti. Remove them at least two minutes before the cooking time and place them in the pan with the sauce. If it is too dry, add a few tablespoons of pasta cooking water. Finish cooking and serve hot.
Tips/Advice
As an alternative to gomasio you can use sesame seeds and a pinch of salt.
