A quick dish to prepare when you don’t have time, but still want flavor! Serve it with a fresh tomato salad.

Ingredients
- 2.2 lbs Chicken breast (sliced)
- 14 oz Potatoes
- 7 oz Bacon (sliced)
- 10.5 oz Breadcrumbs
- 4 Eggs
- 5.3 oz Flour
- to taste Smoked salt
- 2 tbsp Parmesan cheese (grated)
- to taste Olive oil
Preparation
Boil the potatoes with their skins in plenty of salted water. Once cooked, peel them, place them in a bowl, and season with smoked salt (for information and recipe click the link) and a little oil.
Flatten the chicken slices with a meat tenderizer. Place them on a work surface, put a quarter of a potato on the slice and roll up. Wrap the bacon slice around it and secure with a toothpick.
In 3 different bowls, place the flour, beaten eggs with a little salt, and the breadcrumbs.
Coat the rolls first in flour, then in eggs, and finally in breadcrumbs.
Put parchment paper on the oven tray and place the rolls on top. Sprinkle with grated Parmesan.
Bake in a fan oven at 356°F for about 25 minutes.
Notes
Instead of smoked salt, you can use regular fine salt, but you won’t get the same result!
