I tasted the dumplings in Trentino, and I found them truly incredible, soft, tasty, not just a first course, but a really satisfying single dish. These Dumplings with Parmesan Béchamel and Bacon will satisfy you with their bold and tantalizing flavor.

Ingredients
- 12 dumplings (spinach)
- 1 2/3 cups béchamel (Parmesan)
- 7 oz smoked bacon (diced)
- 3.5 tbsp butter
- 5 leaves sage
Preparation
To prepare the Parmesan béchamel, find the procedure by clicking here, but the quantities to consider are 2 1/2 cups of milk, 4.2 tbsp of butter, 4.2 tbsp of flour, 4 pinches of salt, 8 1/2 oz of grated Parmesan.
In a pan, brown the bacon until it becomes crispy.
Cook the dumplings in plenty of boiling salted water. As soon as they float to the surface, drain them and brown them in a pan where you have heated the butter with the sage.
In a deep plate, put 3-4 tablespoons of Parmesan béchamel, place the dumplings on top, and then add the bacon.
Tips/Advice
If you like, you can also enjoy them simply with a meat broth and a sprinkle of grated Parmesan. If you want to make your own meat broth, find the recipe here.
You can prepare a more liquid béchamel if you prefer, by decreasing the amount of flour.
