Potato circles are a tasty snack, an appetizer, a finger food (if made smaller), ideal for birthday parties or buffets. In short, worth trying for various occasions.

Ingredients
- 10.5 oz Potatoes
- 1.25 cups Flour
- 1 Egg
- 2 teaspoons Baking soda
- 4.5 oz Mozzarella
- 3.5 oz Mortadella
- 1 teaspoon Salt
- 2 tablespoons Parmesan cheese (grated)
Preparation
Cook the potatoes with the skin in salted hot water.
Drain them, peel them, and pass them through a potato masher.
Put the potato puree in a bowl, add the egg, flour, Parmesan, and salt.
Mix well, then put the mixture on a work surface and roll it out with a rolling pin.
Make many circles with a glass. On half of the circles, put a little mortadella and mozzarella. Wet the edge with a little water and cover with the remaining circles. Seal the edges using fork tines.
With these amounts, I made about fifteen discs.
Place them on a baking tray with parchment paper on top and bake at 392°F for 15 minutes.
Notes
You can also fry the circles in abundant oil and let them drain on kitchen paper towels.
