Today I tried my hand at a dish with exotic flavors, using the spice mix called Garam Masala, originally from Indian and Pakistani cuisine, but adapting it to a typically Italian dish: pasta! A truly superb combination of flavors!

Ingredients
- 10.5 oz Chicken breast
- 2 tbsp Lemon juice
- 2 pinches Fine salt
- 4.4 oz Yogurt (for cooking)
- 2/3 cup Cream (for cooking)
- 1 tbsp All-purpose flour
- 2 tsp Garam Masala
- 1 tsp Cumin seeds
- 1 tsp Ginger (dried)
- 1 clove Garlic
- 8 Cherry tomatoes
- 1 tsp Turmeric powder
- 1 tsp Sugar
- 2 pinches Fine salt
- 12.3 oz Tortiglioni
- to taste Coarse salt
Preparation
Cut the chicken breast into small cubes and marinate it in a bowl with lemon juice and two pinches of fine salt for about half an hour.
Meanwhile, prepare the sauce by mixing yogurt, cream, flour, well-ground cumin, ginger, garam masala, 2 pinches of salt, and mix well until all ingredients are combined.
In a pan, add a little oil and finely chopped garlic to sauté.
Add the chicken, cook for about 5 minutes, then incorporate the yogurt sauce and cook for another 10 minutes.
In another pan with a little oil, add quartered cherry tomatoes, 1/2 teaspoon of turmeric, 1 teaspoon of sugar, 2 pinches of fine salt, and cook for a few minutes.
Add the tomatoes to the pan with the yogurt mixture.
Meanwhile, fill a pot with plenty of water, as soon as it boils add 2 teaspoons of coarse salt and the pasta.
At least three minutes before the cooking time, drain it with a slotted spoon and add it directly to the pan with the sauce.
Continue cooking the pasta, and if it seems too dry, add some cooking water.
Serve hot.
Notes
I love spices, and this mix is really tasty and appetizing to my taste.
There are various versions of Garam Masala, the one I used for this recipe consists of coriander, cumin seeds, cardamom, cinnamon, cloves, black pepper. In some versions, turmeric, ginger, garlic, or paprika are also present.
If you love spicy flavors, you can add a bit of chili pepper, which goes perfectly!
