Couscous Baskets with Fish Filling

Couscous is typical of North Africa but is also very popular in Sicily. It is a food made from steamed wheat semolina grains that are usually served as an accompaniment to meat, fish, and vegetable dishes. I love it and enjoy finding new recipes to serve it.

Ingredients

  • 1.1 lbs mixed seafood (frozen for risotto)
  • 1.5 cups cherry tomatoes
  • 1 zucchini
  • 1 onion
  • to taste fine salt
  • to taste black pepper (ground)
  • to taste curry
  • to taste chopped parsley
  • 1.25 cups water
  • 10.5 oz raw couscous
  • 1 teaspoon coarse salt
  • 1 tablespoon olive oil
  • 3 eggs (medium)
  • 3 tablespoons grated Parmesan cheese

Preparation

  • In a pan, put some olive oil, the onion chopped into small pieces, the zucchini diced, the tomatoes quartered, the mixed seafood.

    Season with salt, pepper, add parsley and curry, cook for about 30 minutes.

  • With these quantities, you will make 6 couscous baskets.

    Put 1.25 cups of water in a pot and bring it to a boil.

    Add a teaspoon of coarse salt and then the couscous.

    Stir the mixture, turn off the heat, and cover with a lid.

    Once all the water has been absorbed, add the olive oil and fluff it with a fork.

    Once it has cooled a bit, add the Parmesan and eggs.

    Mix well and cover previously buttered molds, making sure to leave a hollow inside to put the fish mixture.

    Bake with the fan at 356°F for about 20 minutes.  

    Remove the couscous baskets from the oven, gently remove them from the molds (if you want, you can cover the mold with slightly wet and squeezed parchment paper to make it easier to remove the baskets).

    Fill the baskets with the seafood mixture and serve hot.

Tips/Advice

I usually use frozen mixed seafood, as sometimes I don’t have much time to cook and find it a good and tasty alternative to fresh fish. Of course, you can also use fresh fish, a great mix of mussels, surimi, clams, and cuttlefish.
