Ingredients
- 5 oz spaghetti
- 3 artichokes
- 3 1/2 tbsp dry white wine
- 7 oz desalted cod
- 2 tbsp extra virgin olive oil
- 1 clove garlic
- 1 3/4 oz tomato sauce
- 3 1/2 tbsp water
- 1 sprig parsley

Steps
Remove the tougher leaves and tips from the artichokes, clean the stem, and cut them into quarters. Immerse them one by one in water with lemon juice to prevent browning. Slice them very thinly and sauté in a pan with oil and whole garlic. After 5 minutes, deglaze with white wine and let it cook covered for 10 minutes on low heat.
Remove the skin from the cod, cut it into pieces and add it to the artichokes, mix, and after 5 minutes add the tomato sauce diluted with hot water, cover, and let cook for another 10 minutes to finish cooking. Taste to check the saltiness and adjust the salt in the pasta water accordingly. Meanwhile, cook the spaghetti (I used whole wheat spaghetti) and once cooked al dente, add them to the sauce along with a ladle of pasta cooking water. Mix well, remove the garlic, and if desired, add chopped parsley.
Advice
If you want to add some crunchiness, simply sprinkle the finished dish with crumbled and toasted breadcrumbs
