Ingredients for the Japanese Yogurt Cheesecake

  • 5.3 oz 0% fat Greek yogurt
  • 7 Biscoff Lotus cookies
  • 1 coffee cup coffee
  • as needed unsweetened cocoa powder

Steps

  • To prepare the Japanese yogurt cheesecake, first make a cup of coffee, preferably leaving it unsweetened. If you don’t like it too bitter, you can sweeten the coffee. Let it cool completely.

  • VERSION 1: TIRAMISU STYLE. Open the Greek yogurt container and pour in half of the coffee. Stir with a teaspoon to make it homogeneous. I left the surface of the yogurt “disheveled”, but if you prefer, you can smooth it out again.

  • At this point, insert the cookies dipped in coffee into the yogurt by pushing them all the way down. Set aside 2 cookies for the final decoration.

  • Crush the remaining cookies over the yogurt surface, cover with plastic wrap, and let it rest in the fridge for 3 hours. When you want to enjoy your Japanese yogurt cheesecake, sprinkle the surface with unsweetened cocoa. Enjoy your meal!

  • VERSION 2: CLASSIC. Take the Greek yogurt of your preferred flavor, dip the cookies in milk, and insert them vertically into the yogurt. Cover with plastic wrap and enjoy after resting for 3 hours in the fridge.

  • VERSION 3: NEW YORK CHEESECAKE STYLE. Take the Greek yogurt, dip the cookies in sweetened cold coffee (or milk), insert them vertically into the yogurt, and cover with your favorite jam. Enjoy after resting in the fridge for 3 hours.

Storage

The nice thing about this no-bake Japanese cheesecake is that the longer it rests, the better it is. You can consume it the same day if you prepare it in the Greek yogurt jar. You can make it in an airtight container and store it in the fridge for up to 3 days.

FAQ (Frequently Asked Questions)

  • Which type of Greek yogurt is the best for Japanese yogurt cheesecake?

To achieve the most velvety consistency and rich flavor, I recommend using 0% Greek yogurt. You can opt for full-fat, but the result may be slightly more caloric.

  • Can I replace Lotus cookies with other types of cookies?

Yes, the japanese cheesecake can be made with other dry cookies of your choice, like shortbread, digestive, or cocoa cookies. The final flavor will change slightly, but the result will still be great.

  • Can I add other flavors or ingredients to the yogurt cream?

Certainly! To customize your no-bake Japanese cheesecake, you can add vanilla extract, grated lemon zest, or even a teaspoon of sweet liqueur (like rum or amaretto) for an extra touch. Or use flavored Greek yogurt directly.

  • Is this recipe suitable for children?

Yes, but do not use coffee. Replace it in the cookie base with milk or fruit juice, and ensure the cocoa on top is not too bitter.
