The potato meatloaf with mushrooms is an economical and practical recipe because you can prepare it well in advance and store it until it’s time to cook. All you need are a few simple ingredients: Potatoes, 1 egg, grated Parmesan cheese, and salt. For the filling, I went with mushrooms and speck, but you can create new combinations like speck and walnuts or a heart of spinach and mozzarella. Let your imagination run wild. Ingredients

  • 28 oz potatoes (to peel)
  • 1 egg
  • 1/3 cup grated Parmesan cheese
  • to taste salt
  • to taste breadcrumbs (for garnish)
  • 11 oz mushrooms
  • 7 oz speck
  • 2.5 oz scamorza

How to Make Potato Meatloaf with Mushrooms

  • Peel the potatoes and cut them into more or less regular pieces, and cook them in salted boiling water for about 7-8 minutes or until they are tender with a fork.

  • Once cooked, pass them through the potato masher while still hot, add salt

  • The grated cheese and the egg, and mix everything.

  • Once you have obtained a homogeneous mixture, flatten it on a sheet of parchment paper, well-oiled and sprinkled with breadcrumbs, giving it a rectangular shape. Fill with speck, mushrooms, and cheese.

  • Then roll it up using the parchment paper and transfer it to a loaf pan.

  • Sprinkle the surface with breadcrumbs and a drizzle of oil. Bake the potato meatloaf in a preheated oven at 390°F for about 35-40 minutes.

Storage and Variations of Potato Meatloaf with Mushrooms

The meatloaf is even better the next day. This potato meatloaf lends itself to numerous variations: you can add a melting heart of mozzarella if you don’t like scamorza, or replace the speck with bacon or cooked ham, or use porcini mushrooms for a more intense flavor. For a vegetarian version, just remove the speck and increase the amount of mushrooms.
