Gluten-Free Yogurt Focaccia

Ingredients

  • 1 cup cups water
  • 2 1/4 tsp tsps dry yeast
  • 1 tsp sugar
  • 1 cup cups Greek yogurt
  • 3/4 cup cups brown rice flour
  • 3/4 cup cups fine buckwheat flour
  • 3/4 cup cups cornstarch (or rice starch)
  • 2 tbsps tbsps psyllium husk
  • 2 tsps tsps salt
  • 2 tbsps tbsps extra virgin olive oil
  • 2 tbsps tbsps extra virgin olive oil
  • 2 tbsps tbsps water
  • to taste oregano
  • to taste coarse salt

Steps

  • In a bowl, mix the rice flour, buckwheat flour, cornstarch and psyllium husk. In a small bowl, dissolve the yeast in the water with the sugar. In the stand mixer bowl, pour the Greek yogurt, the water with the yeast, and mix, then add the flours. Work the mixture with the paddle until it starts to bind: it will look hydrated and sticky. Finally, add the salt and oil, and mix well to blend all the ingredients. Transfer the obtained dough into a bowl and let it rise for two hours. You won’t get a perfect doubling, but you will still see a soft dough grow. After resting time, transfer it into a 12-inch pizza pan and spread it with slightly oiled hands. Let it rest for thirty minutes. Meanwhile, prepare the emulsion by mixing all the ingredients in a small bowl. Bake the focaccia in a preheated oven at 390 °F (200 °C) for 25/30 minutes. Serve the focaccia still warm.

Notes

It keeps at room temperature for a couple of days wrapped in plastic wrap.
