Ingredients
- 2.2 lbs chicken (in pieces: thighs, breast, and drumsticks)
- 3 potatoes
- 1 clove garlic
- to taste extra virgin olive oil
- 2 sprigs rosemary
- 1 cup beer
- to taste salt
- to taste pepper
How to Prepare Beer Skillet Chicken
Start by seasoning the meat with salt, pepper, garlic, and rosemary, and drizzle with a bit of extra virgin olive oil.
Massage and let it marinate for a couple of hours.
In a large skillet, heat a drizzle of olive oil, then place the chicken.
Brown on both sides, deglaze with beer, and let it evaporate.
Once the meat is cooked, transfer it to a baking dish with the cooking juices, then cover with foil to prevent drying out. Meanwhile, peel the potatoes and cut them into wedges approximately 1.5 inches.
In the same skillet where you cooked the chicken, pour a drizzle of oil and add the potato wedges and garlic. Adjust with salt and pepper, and brown them over medium heat for about 15 minutes or until golden.
After 15 minutes, the potatoes will be colored, so remove the garlic cloves and combine with the chicken.
Continue cooking over medium heat for another 10-15 minutes with the lid on. Remove from heat and enjoy!

It largely depends on the cut of the meat; it shouldn’t be too large. To avoid drying out during cooking, avoid cooking at too high temperatures; cook over medium heat, turning a couple of times.
Recommended spices for chicken?
Besides salt and pepper, I absolutely recommend rosemary, preferably fresh. Alternatively, oregano, but it tends to get a bitter taste when cooked.

You can season it even the day before, cover with plastic wrap, and let it rest in the fridge.
