Let’s prepare the fruit:
Wash and carefully clean all the fruit. Remove the thinnest possible peel from 2 oranges and 2 lemons and set it aside.
Clean the oranges and lemons, removing as much of the white part as possible, then cut them into pieces, removing the seeds as well.
In the meantime, peel the apples and carrots and chop them together with the citrus peel.
Maceration:
Put the carrots, apples, oranges, and lemons. Add sugar, mix well, and let it rest in the refrigerator for a few hours. This step helps to bring out all the fruit’s aromas.
Cooking:
After the resting time, transfer everything to a pot and place it on the heat. Cook over medium heat, stirring occasionally, until the desired consistency is reached. At the end of cooking, add a bit of vanilla, stir, and turn off the heat. Jarring:
Pour the hot jam into sterilized jars,
close tightly, and turn upside down to create a vacuum seal. Let cool completely.
