Hunter-style Sausage

Hunter-style sausage is a tasty meat main course, delicious and easy to prepare.

Few, simple ingredients for a very simple dish to make, rich and nutritious, perfect for any occasion, from family lunch or dinner, to dinner with friends, to Sunday lunch or a holiday… and don’t forget to mop up the sauce with bread!

Ingredients

  • 1.3 lbs sausage
  • 14 oz tomato pulp
  • 1 onion
  • 1 carrot
  • 1 stalk celery
  • 1 glass red wine
  • black olives
  • rosemary
  • extra virgin olive oil

Preparation of hunter-style sausage

  • Clean the onion, peel the carrot, wash the celery and chop them.
    Heat a few tablespoons of extra virgin olive oil in a large pan.
    Pour in the chopped vegetables and sauté for a few minutes.

  • Add the sausage and rosemary, and brown the sausage well on all sides over high heat, then deglaze with red wine.
    When the alcohol has evaporated, add the tomato pulp, lower the heat, cover with a lid and let cook for about twenty minutes, stirring occasionally.

  • Uncover, add a handful of black olives, stir again and let cook for another five minutes or so to reduce the cooking juices a bit.
    Serve immediately, hot, your hunter-style sausage.
