Ingredients
- 4 cups all-purpose flour
- 3.5 oz sourdough
- 0.85 cup milk (or water)
- 6.5 tbsp sugar
- orange zest
- 3.5 oz butter
- 2 egg yolks
- 3.5 tbsp orange juice
Preparation
Dissolve the yeast in milk or water.
Combine the sifted flour, sugar, butter, and orange zest.
Start kneading, by hand or with a mixer, and add the egg yolks.
Lastly, add the orange juice; if necessary while kneading, add a bit of flour.
The dough shouldn’t be sticky; it’s fine if soft but not liquidy or too soft that it sticks to your fingers.
Form a ball, place it in a bowl, cover with plastic wrap, and let rise overnight in both cases.
Rising time can vary from 6 to 8 hours with sourdough depending on the outside temperature.
After rising, take the dough, form it into a sort of cylinder, and place it in a loaf pan.
Let it rise for about an hour, then preheat the oven to 356°F.
Bake for 20 minutes, do the skewer test, and if necessary, extend the baking time slightly.
