The super soft mandarin cake is the perfect dessert if you’re looking for something good and wholesome. It’s a super soft cake made with mandarin juice, ideal for the whole family’s breakfast or snack. My nephew loves it so much, he would happily eat one slice after the other!
This recipe is really simple: you need few ingredients and the batter only takes 5 minutes with electric beaters. In no time, you’ll have a soft cake, a real cloud of homemade goodness with seasonal fruits.

Ingredients for the Super Soft Mandarin Cake
- 1.6 cups all-purpose flour
- 2 eggs
- 0.4 cups granulated sugar
- 2.5 tablespoons vegetable oil
- 1/4 cup milk
- 1/2 cup mandarin juice
- 1 tablespoon baking powder

I used a rectangular pan, but if you prefer, you can use a round mold with a diameter of 9.5 or 10 inches.

Steps
In a bowl, mix the eggs with the sugar. If the mandarin peel is edible, add it at this stage. Once the mixture becomes frothy (it will take about 3 minutes), add the oil, the mandarin juice, and the milk.
Finally, incorporate the flour and sifted baking powder. Finish working everything with the electric beaters, then give a final stir with a hand spatula.
Pour the batter into a buttered and floured mold (a rectangular one 12×8 inches or a round one of 9.5-10 inches is fine). Bake in the oven in the central part at 350°F for about 25 minutes. After the time has passed, do the toothpick test: if it comes out dry, your mandarin cake is ready.
Once ready, let the cake cool completely and then turn it over onto a serving plate.
To make the decoration, I used a very simple method: I cut out rectangular strips of paper and placed them over the cake, spacing them apart. I sprinkled generously with powdered sugar and then, very gently, removed the strips.

Storage and Variations for Mandarin Cake
The mandarin cake will stay soft for 3-4 days if stored under a glass dome or in an airtight container, at room temperature. If you prefer, you can also freeze it already sliced, so you always have a piece ready for breakfast.
Variations
If you want an even more indulgent touch, you can add dark chocolate chips to the batter: the combination with mandarin is exquisite! Alternatively, you can replace the milk with water or another juice for a completely lactose-free version, or use whole wheat flour for a more rustic taste.
