Kataifi Nests with Caramelized Apples and Cream

I have known kataifi for a lifetime: I worked in the kitchens of a Greek restaurant and I know very well how versatile, scenic, and perfect it is even when you make it at home.
Every time I buy it, I always feel a bit of nostalgia for those years: busy, intense days, the kind where real cooking happened, amidst kitchen aromas and ethnic spices, and that frenetic pace that somehow stays in your heart.
It also reminds me of the charming customers of my tavern, because yes… I worked in Greek restaurants, but for four years I also owned my tavern, called Il Terzo Cerchio: a name chosen thinking, inspired by the circle of gluttons from the Divine Comedy.
And today, as an adult, I realize that maybe I made a big mistake selling it: in hindsight, I should have stayed there. Because if there’s one thing I truly love, 24/7, it’s this… cooking and entertaining, making people feel good, making them smile at the table. Anyway, enough with the melancholy and off to the kitchen!!!!!

Ingredients

  • 3.88 oz kataifi dough
  • 1 apple (large)
  • 4.23 oz butter (melted)
  • 1 tbsp sugar (generous)
  • 1 tbsp honey
  • to taste whipping cream, 35% fat (whipped)
  • to taste cinnamon
  • to taste vanilla

Steps

  • Peel the apples of your preferred variety and cut them into small cubes.
    Heat a pan, pour in a piece of melted butter, and add sugar and honey.
    Add the apples and cook them until they become soft, shiny, and slightly caramelized.
    Add your preferred flavoring like vanilla extract or a pinch of cinnamon powder.

  • Prepare the kataifi dough
    Unroll the Greek kataifi dough and carefully separate the strands with your fingers.
    Brush the fine strands of dough with the remaining melted butter.
    Form 5/6 small nests as shown in the photo just below and place them in muffin molds or on a baking sheet.

  • Assemble the treats before baking
    Fill each nest made with the kataifi strands with a generous spoonful of apples.

  • Cook in the oven
    Bake the tray with the apple-filled nests in a static oven at 340-355°F for about 15-18 minutes or until the treats are golden and crispy.

  • Ready for a snack
    Once cooled, I thought why not add a nice dollop of whipped cream before tasting them!

    They are quick, delightful, and perfect for a treat at any time of the day!
