The citrus sauce is a flavorful emulsion based on orange, soy sauce, honey, and tahini perfect for flavoring chicken-based main dishes, ideal to accompany fish, or to give a little extra kick to a salad. I found the citrus sauce recipe in Serena’s book, “In the Kitchen with the Food Organizer,” and I couldn’t resist; I had to try it immediately. It’s amazing! Try it for yourselves!

- Difficulty: Easy
- Cost: Economic
- Preparation time: 5 Minutes
- Portions: 1 Piece
- Cooking methods: No cooking
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 1.41 oz soy sauce
- 1.41 oz honey
- 1.41 oz extra virgin olive oil
- 1.41 oz tahini
- 1 orange (grated zest)
- 2 tbsp orange juice
- to taste parsley
Tools
- 1 Immersion Blender
- 1 Jar glass jar for preserves
Steps
Prepare the sauce: place all the ingredients in the immersion blender and blend well to obtain a creamy emulsion similar to caramel. Transfer it to a glass jar with a lid and store in the refrigerator for ten days or in the freezer for up to six months. The sauce does not completely freeze, so it can be used directly from the freezer to the pan: just scoop out the amount needed with a spoon. You can use it by adding it at the end of cooking for meat, fish, and vegetables or to marinate meats that will then go in the oven.
Even with oranges among the ingredients, the sauce is suitable for all seasons: by freezing it, you can prepare a small stock before the orange season ends and keep it on hand for use as needed.
