  • 3 cups all-purpose flour
  • 1 1/4 cups potato starch
  • 1 1/10 cups cold butter from the fridge
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 pinch salt
  • 1 1/4 cups powdered sugar
  • Nutella®
  • powdered sugar

Steps for Nutella Linzer Cookies

  • To make these cute Nutella Linzer Cookies, the dough needs to be prepared. If you prefer, you can make the shortcrust by hand using a bowl. For convenience, I used a stand mixer. In the bowl of the stand mixer, add sifted all-purpose flour and potato starch, cold butter cut into cubes, vanilla extract, salt, and mix everything using the leaf beater at speed 1-2. Once the "sandy" texture is achieved, named so because the mixture resembles sand, add powdered sugar and the egg, and mix again until a smooth and homogeneous dough is formed. Wrap the resulting shortcrust dough in cling film and refrigerate for an hour to firm up. After an hour of rest, take the dough out of the fridge and, on a floured pastry board, use a rolling pin to roll out a sheet about 1/8 inch thick and form the cookies using the flower-shaped cutter. You should obtain an even number of cookies, with one whole circular cookie and another cookie with a hole in the center, made simply with the help of a smaller cutter or a corer. Then place the cookies on a baking tray lined with parchment paper and bake them in a preheated static oven at 350°F for about 15 minutes. Remove from the oven and let cool. STORAGE, TIPS, AND NOTES

The Nutella Linzer Cookies can be stored in airtight or tin containers for a few days. If desired, you can replace Nutella with hazelnut spread or simple jam or custard.
