Steps

  • Clean the fennel, remove the tough parts and slice them not too thin.

  • Cook over low heat, stirring occasionally until the fennel becomes colored. If using white sugar, cook for about 5-7 minutes until softened.

  • I prefer to make them this way, but you can also brown the fennel first, then add the sugar and let it dissolve before adding the vinegar and the rest of the ingredients.
