Start preparing the pasta with roasted cherry tomatoes, guanciale, and ricotta by placing the washed and dried cherry tomatoes in a baking dish.
Season with salt and extra virgin olive oil and mix well.
Add the garlic and guanciale and mix again.Cook the cherry tomatoes with the guanciale in the oven at 392°F or in an air fryer at 356°F for 18-20 minutes.
Remove the garlic and set aside.Cook the pasta in salted boiling water.
Meanwhile, place the ricotta in a bowl and mix it with a bit of pasta cooking water until it becomes creamy.Drain the pasta al dente and place it in the bowl with the ricotta.
Mix well, and if it’s too dry, add a bit more cooking water.Add the roasted cherry tomatoes and guanciale to the bowl.
