The homemade air fryer rolls for me are proof that even simple things can bring great satisfaction: few ingredients, hands-on dough, and the aroma of warm bread filling the kitchen in no time.
I love it because it’s a practical way to make bread at home and have it always fresh, without turning on the oven to get rolls that are soft on the inside and slightly golden on the outside, perfect to fill as you like or to enjoy while still warm.
I make them with type 1 flour, semi-wholemeal, stone-ground, preserving the properties of wheat and much less refined than 00 flour. Genuine and healthy as I like them.
They are ideal for an impromptu dinner, a quick lunch, or when you crave something homemade, genuine, and without too many steps, but with all the flavor of things prepared with calm and pleasure.

Ingredients
- 4 cups type 1 flour
- 1 1/2 cups water
- 1 3/4 tsp fresh yeast
- 2 tsp fine salt

Steps for Air Fryer Bread
In a measuring cup put the lukewarm water and fresh yeast. Mix and dissolve the yeast. In a large bowl pour the flour, add the water with dissolved yeast and fine salt. Mix roughly with a wooden spoon and then knead with your hands directly in the bowl, or on a pastry board.
Until you get a smooth and compact dough. Let it rest for about thirty minutes.
Then make the folds. Spread out with your hands, on a slightly greased pastry board, but not floured otherwise it will dry the dough, until you have a uniform rectangle
Lift and stretch one side of the dough outward and fold that end over the center of the dough.
Do the same with the opposite side
Rotate 90 degrees and fold the other side to the center
and overlap the last one over.
Place the dough in a container and let it rest until it doubles in size. You can let it rest either at room temperature, which will take less time, or in the fridge wrapped with plastic wrap, which will take more time, so you can do it the night before for the next day. When it has doubled, dust it lightly with flour and divide into 10-12 rolls, or the desired size.
Place them in the basket of the air fryer lined with parchment paper and cook at 375°F for about 16-18 minutes, turning them halfway through the cooking process. Check the cooking in the last few minutes.

Storage
Store the air fryer bread in a paper bag for two to three days.
You can freeze. Freeze the cooled rolls in freezer bags; they keep for up to 2–3 months. To use them, thaw at room temperature or heat directly in the air fryer for 2–4 minutes at 320–340°F, to make them soft again.
