The Piedmontese Giardiniera, also known as Piedmontese Appetizer, was born from the need to preserve fresh garden vegetables for a longer period. Jar preservation ensures consumption even during the winter. You can enjoy it simply or pair it with tuna, hard-boiled eggs, or mushrooms in oil.

Ingredients
- 5.3 oz green beans (frozen and blanched)
- 5.3 oz cauliflowers (frozen and blanched)
- 5.3 oz carrots (cleaned)
- 3.5 oz celery (cleaned)
- 3.5 oz small onions (cleaned)
- 5.3 oz bell peppers (cleaned)
- 2.8 cups tomato sauce
- 5.6 tbsp olive oil
- 5.6 tbsp white wine vinegar
- 3 tsp fine salt
- 1 tsp sugar
Steps
Wash the vegetables and cut them into fairly small cubes, more or less the same size.
In a large pot, pour the tomato sauce, then add the carrots and celery as the first vegetables. Cook them for about ten minutes.
Now add the other vegetables: green beans, cauliflowers, bell peppers, and onions. I used frozen green beans and cauliflowers that I had slightly blanched. Mix well.
Add the oil, vinegar, salt, and sugar. Mix all the ingredients well and continue cooking for about 20 minutes.
The vegetables must be cooked but still slightly crunchy, they should not become mushy.
Meanwhile, as the vegetables cook, take care of the jars. First, wash them well, then place them open with the lids in a large pot, you can wrap them in clean cloths to prevent them from breaking during boiling. Fill the pot with cold water until the jars are completely covered. Bring the water to a boil, then lower the heat and boil for about 30 minutes by placing the lid on the pot.
Remove the jars and turn them over on a kitchen towel, letting them drain, then turn them over and let the water evaporate. Before use, they must be completely dry.
To speed up the operation and ensure they are completely dry, you can also pass them in the oven at about 176°F for a few minutes or I put them upside down in the dishwasher.
With a ladle, take your still boiling giardiniera, fill the jars, and close them well.
Cool the jars upside down. These quantities gave me 4 jars of 14 oz each.

To avoid health risks, I recommend reading very carefully the Ministry of Health Guidelines, where the rules regarding jar sterilization and food preservation are detailed in a few pages. Sterilized jars are ideal for preserving foods, like canned peaches.
