Pan-Fried Brussels Sprouts

  • 1 onion
  • to taste extra virgin olive oil (or peanut oil)
  • to taste water
  • 1 lb Brussels sprouts
  • to taste salt
  • to taste nutmeg (freshly grated)

  • Knife (sharp straight blade)
  • Pan
  • Ladle

Pan-Fried Brussels Sprouts

  • 1. Clean, wash, and thinly slice the onion. Sauté it in a pan for about 5 minutes with a little oil and water.

    2. Meanwhile, remove the outer and damaged leaves from the Brussels sprouts. Wash them well.

    3. Add them to the onion in a suitably sized pan, along with salt and nutmeg. Cover halfway with water and cook for 10-15 minutes or until desired doneness. Stir and let dry.

Sauté the boiled sprouts al dente with oil, garlic, and chili pepper.

VEGETARIAN Recipes

BRUSSELS SPROUTS PARMIGIANA

Steam the Brussels sprouts (or boil in hot salted water) until tender (test doneness by piercing a sprout with a fork). Drain and brown them in a pan with a knob of butter, and finish by sprinkling with plenty of grated Parmesan. Serve Brussels sprouts parmigiana hot.

OVEN-BAKED BRUSSELS SPROUTS

Boil them and then gratinate in the oven with béchamel and slices of cheese (or grated cheese).

PAN-FRIED

Lightly boil the little cabbages, then continue cooking in a pan with melted gorgonzola in a little milk, and flavor with coarsely chopped walnuts.

OMNIVORE Variations

Add to the pan-cooking:

– some cold cuts (bacon, pancetta, cooked ham, salami, or speck) previously browned in a non-stick pan without fats

– some anchovy fillets (or anchovy paste).
