After making YOGURT PANCAKES and my YOGOMISù, I decided to use it for an apple cake to use up some more plain Greek yogurt, as eating it as is was getting boring!

Ingredients
- 1 1/4 cups all-purpose flour
- 3/4 cup sugar
- 2/3 cup Greek yogurt
- 1/4 cup potato starch
- 2 eggs
- 2 apples
- 1 packet baking powder
- cinnamon
- vanilla extract

- 1 Pan 9 inch
Preparation
Wash the apples, peel them, and remove the core.
Slice the apples thinly and set aside.
In a large bowl, pour the eggs and sugar.
Whisk the two ingredients to obtain a light and fluffy mixture.
Add the vanilla extract and Greek yogurt, then mix again.
Place the flour, potato starch, and baking powder in a sieve.
Sift the powders over the mixture.
Stir with a spatula to combine the ingredients and obtain a smooth and homogeneous cream.
Butter and flour a 9-inch pan.
Pour the mixture into it and level with the spatula.
Decorate the apple cake with Greek yogurt with the apple slices.
Finish by sprinkling the surface of the cake with ground cinnamon and granulated sugar.
Bake the apple cake in a preheated static oven at 350°F and cook for about 40 minutes.
Before removing the cake from the oven, check its doneness with a toothpick, especially the center.
Remove the cake from the oven and let it cool slightly before serving.
Storage
Store the apple cake with Greek yogurt under a glass cake dome for 3 days.
