They work when you’re short on time, but also when you want to put something impressive on the table, as they change roles depending on the context: serious aperitif, smart snack, or crispy element that elevates a simple dish.
The air fryer dries without over-drying and concentrates flavors instead of dispersing them in oil.

Gratinated chickpeas recipe
- 7.75 oz cooked chickpeas
- 1 oz cornstarch
- 3 tbsps breadcrumbs
- 1 tsp paprika
- 1 tsp dried red chili pepper
- 1/2 chopped onion
- 2 tbsps extra virgin olive oil
- to taste fine salt

Steps for Gratinated Chickpeas in Air Fryer

Drain and dry the cooked chickpeas well
They need to be as dry as possible: this is the first secret to crispiness. Pat them with kitchen paper until they are no longer moist.
Place the chickpeas in a bowl along with the cornstarch and mix well. Add the salt, paprika, chopped onion, chili pepper, extra virgin olive oil, and breadcrumbs. Mix well to ensure the ingredients are evenly distributed.
Arrange the chickpeas in the basket of the air fryer in a single layer. Cook at 375°F for 14–16 minutes, shaking the basket halfway through cooking for even browning.
Let them rest 2–3 minutes outside the fryer: the residual moisture evaporates and they become even crispier.
Taste and, if necessary, adjust the salt or spices. Serve hot or warm.
Storage
To store the cooked chickpeas from the air fryer, let them cool completely before storing: never seal them while hot.
Place them in a non-airtight container
Keep them at room temperature, in a dry place
This way they stay decent for 24 hours. Beyond that, they inevitably begin to lose crispiness.
